1.    Raspberry Chocolate Chip Protein Brownies

What if you were to combine delicious raspberries with chocolate? Sounds amazing, right? This could easily become one of your favorite protein brownies recipes. Give it a try, and each brownie is under 100 calories!

Servings: 12

Ingredients:

  • 1/4 cup gluten-free rolled oats
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup whey chocolate protein powder
  • 1/2 cup unsweetened applesauce
  • 1 egg
  • 1 tablespoon honey
  • 1 teaspoon vanilla extract
  • 2/3 cup Blue Diamond Almond Breeze Unsweetened Vanilla or Chocolate Almond Milk
  • 2 tablespoons coconut oil
  • 1/4 cup chocolate chips, plus 2 tablespoons for topping
  • 1/2 cup raspberries, broken up into large pieces

Directions:

  1. Preheat your oven to 350°F.
  2. Use cooking spray to coat an 8×8 baking pan.
  3. Make your own oat flour by tossing your oats into a food processor or blender until they form a nice fluffy powder.
  4. Put the oat flour you just created into a medium-sized bowl, and then using a whisk, add in your protein powder of choice as well as the cocoa powder.
  5. Next, using a separate bowl, combine the almond milk, vanilla, egg, applesauce, and honey and whisk until it is mixed completely and the consistency is smooth.
  6. Take the contents you just mixed together and go ahead and add them to your dry ingredients and mix them together thoroughly.
  7. Using your stove-top on low heat, combine your 1/4 cup of chocolate chips with the coconut oil in a small pan. Be sure to continuously stir the contents while heating so they don’t burn, and ensure that both contents have completely melted and mixed together.
  8. Take the pan off of the stove-top and slowly stir it into the brownie batter you created.
  9. Once everything is mixed completely, go ahead and pour the mixture you created into the baking pan.
  10. Now for the yummy part! Sprinkle the raspberries and remaining 2 tbsp of chocolate chips on top of your mixture in the baking pan.
  11. Put the baking pan in the oven and bake for 18-22 minutes. Check to ensure the top of the brownies have set, and the batter is baked all the way through.
  12. Remove the baking pan from the oven and place it on a cooling rack.
  13. When the brownies have completely cooled off, grab a knife and cut them into 12 evenly-sized bars.
  14. Enjoy them immediately or store them in a container in the refrigerator. They are best when served cold.
